I'm able to keep it in the air, but I can't really aim at anything specific or land the damn thing. I loaded up a single player game thinking I could just practice in that, but the computer players grab the chopper faster than people online.
My thought with a joystick was that when I let go, and let my stick go back to the center, my choptar should even out on it's own. but no, it's not that n00b friendly :(

Okay look. Using either Keyboard or Joystick, you have to make slight adjustments in a skillful and useful way. Keyboard, you have the keys W A S D. Those controls the collective and the roll of the aircraft. Collective for the helicopter means that you can adjust the helicopters altitude by going up, and going down. W raises the collective, S lowers the collective. A and D controls the roll of the aircraft. Which means you can roll left, and roll right. These determine how sharp your turn is when you combine them with your Arrow keys. Now to the arrow keys, UP and DOWN arrow keys controls the pitch of the helicopter. Pitch up, or pitch down. When you pitch down, you can control the speed to go faster but not too far or you will crash into the ground. But combine that with the W S keys and you will be fine. To hover from a fast speed, you raise the pitch of your aircraft and hold down S to counteract your decent to make a successful hover. Continue to tap the W and S keys to maintain altitude. The LEFT and RIGHT arrow keys determines your YAW of the aircraft. What the hec does YAW mean ? Your rudder pedals. It will turn the aircraft on the horizontal level. This is your main way of turning. Apparantly.... combine that with the A and D keys.
If you're using a joystick, then make sure you calibrate your joystick before using it each time. Now when you use your joystick, it should be simple. Twist is to YAW, left and right is to roll, up and down is the pitch and your throttle is the collective.
Go to singleplayer with these notes in mind and practice low flying to master your skills.

Is there any commands or any way to tell computer players not to take certain vehicles? hehe...

Just get to them fast and know where they spawn. Thats all i gotta say. And if you somehow get in like the gunner seat or any part of the vehicle, just hit F1 and it will automatically swap places.

Keep in mind that the computer wont hold a grudge if you TK it in order to get a chopper. Kill anyone that gets near it but be sure to leave that behavior back in single player.

You should be able to just host your own server on your own computer. You can use the vehicles to your heart's content then.

Go to create a room and create a game on local server(your comp) and password it, you will be in all alone then
I don't know if you joystick is 3 axis or not, the third being twist, if it is NOT 3 axis, i suggest getting 1.

also try adjusting the settings for pitch and yaw so that they are greater or lower. Some people don't have to but it may help with your joystick. as you get better you can loosen them up more to give you more manouverability.
