First, grab a beer. We have to get first, things first.

Then take a regular package of Philly Cream Cheese, and a 16 oz. box of "Hot" Mexican Style Velveeta Cheese and sit them out to soften up. This is a good time for a beer break and a short Father's Day nap. When you get up, take the Philly Cheese and blend it together with a can of hot Rotelle. Make sure you squeeze all the water out of the Rotelle and just get the chunky bits of stuff.

Have another beer.

Think of anything else you would like to add to this dippy looking stuff. Salt and pepper, garlic, chiles, jalapenos, nuts, olives, they all work.

Now find your wax paper. Of course you don't have any wax paper! Nobody keeps wax paper around any more. Have another beer while your significant other runs to the store for wax paper. Now take a couple big sheets of wax paper and put the Velveeta cheese in between them. Kinda mash it flat with your hands some. Then take a rollin pin and roll it out into a sheet like a pie crust. The wax paper keeps it from sticking to the table or your pin. The goal is a rectangle about 1/4" thick or less. Good luck. This will take a couple of beers to get right. Then take the top wax paper off.

Take your Philly/rotelle mixture and put it on the cheese. Carefully roll it up like a burrito. You can use the wax paper it is sitting on like an old timey cigarette roller to assist you in this mission. Send your significant other back to the store for chips while you have another beer and admire your spicy cheese roll. If you want you can sprinkle the top with a bit of cajun spice mix. When she gets back you can munch out.
