So I did some more searching tonight and have figured out how to unlock the unlockables in the demo. Basically you change some files in some zip around. Bottem line is I went into that zip and did it all for you. If you want to try out the unlockables for youself then I present to you the zip. It goes in your BF2 folder under mods/bf2/. You probably want to rename the other one so you can go back to the old weapon set as you will not be able to play on a server that doesn't also have this change to have them unlocked. It is fun to mess around with in singleplayer or a LAN game though.

You can also just go into your main BF2 folder and go to python/stats/ and open the unlocks.py in notepad and change this:
defaultUnlocks = [0, 0, 0, 0, 0, 0, 0]
to this:
defaultUnlocks = [1, 1, 1, 1, 1, 1, 1]
Thought that only seems to work in singleplayer.

As far as the weapons go, they all seem to be at least slightly better than the standard.
Assault- Their weapon seems much less accurate but a bit more powerful, they also get grenades instead of the launcher.
Anti-Tank - Their weapon is great. They get an auto shotty with 12 rounds in it and its very very good close range but reload is a pain in the ass. It takes a good 10-12 seconds to reload from 0-12 shells as you put each shell in one at a time and cannot fire while reloading, so you cant have 5 in the barrels and have an enemy pop out and blast him then reload some more.
Engineer- The Jackhammer is pretty good, unlike the anti-tank shotty this one reloads at a decent speed and has 7 powerful rounds per load. Definately better than the normal shotguns of the engineers but still not doesn't make them a real combat class.
Support - The unlockable MG is pure awesomeness. It has greatly improved prone accuracy over the other MGs and does a bit more damage.
Sniper - It has very noticably improved accuracy and maybe a little bit more range of accuracy.
Medic - From what I noticed this gun is a lot less accurate but maybe a little more powerful. Even the single shot fire in scope (yes, not ironsights for this one) is fairly inaccurate even in moderate/close range. I don't know if this one is a real improvement unless your going to be charging head-first into enemies. Maybe I need to test it a bit more.
Spec-Ops - From what I got out of this, its quite a bit more accurate and has a noticable damage increase. Doesn't have a scope though so no laser, gotta use ironsights.
