These things are awesome....some of you may have had them but since not many recipes impress me enought to share, I think I should highly recommend this. It's quick and easy and totally munchable.
Go and get....
A package of Sunsweet Chopped Dates. It's a 10 oz. can. They are over by the raisins. If you hate dates, don't be skeered. You will never know they are in this when you are done.
Pecans, chopped or ready to be chopped. You can chop em if you want. You need a cup.
Rice crispies. You need 2-1/2 cups.
Sugar 3/4 cup.
Powdered sugar or flaked cocnut, depending on your taste buds. For this you just need "some". Maybe half a cup.
1 stick butter.
That's it!
Ok, you got your stuff. Now you take and throw the stick of butter in a pot and start heating it up on a medium fire. Pour in the 3/4 cup sugar. Dump in most of the chopped dates. (Do not bother trying to chop them finer with a food processor. They are rubbery and will only laugh at your feeble blade. They cannot be made smaller, but it is ok.) About 10 oz. is all you need.
Heat this stuff up, stirring constantly until it boils about a minute or two. No more or you might make brittle of some kind. Just get the sugar dissolved real good and turn it off.
Now dump in the crispies and chopped pecans and stir it up til it's blended real good.
Now you have a gooie mass of stuff that will take your hide off if you touch it, so let it cool down a while cause you're fixing to pick it up with your fingers. But don't let it get cold or you can't do anything with it.
Once it's down to WARM, get you a couples kids (they love this kind of thing) or a woman or significant other, and grab up a wad. Roll this wad into a ball about the size of a big marble. Nickle to quarter size. Pack it together with enough pressure to pack it but not make the crispies disappear into nothing. When you have the little ball made to perfection, roll it in the powdered sugar or coconut and coat it real good.
This makes about 50 of these little balls and they are a scrumptuous treat.
If you have an older clientel, pour a little bourbon in the hot mix before you roll the balls up.
Oh yeah, babe. You made candy.
